Salad Dressing

  • cup Extra Virgin Olive Oil
  • 3 Tablespoons red wine vinegar
  • 2 cloves garlic minced
  • 3 teaspoons Dijon mustard or 1 teaspoon dry mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • cup grated Pecorino Romano cheese or grated parmesan cheese

Chopped Salad

  • 1 head (5-6 cups) shredded iceberg lettuce
  • 1 head (4-5 cups) shredded romaine lettuce
  • 1 (15-ounce) can chickpeas drained and rinsed
  • ¼ lb (4 ounces) Italian salami thinly sliced
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Instructions
